It seems to be that if I have a fair bit of spare time in a week I get hardly any work done. Last week I had Monday and Tuesday to work before heading off to Port Fairy. I got a week’s worth of work done. This week, I had heaps of time and managed to leave most of my work to Friday afternoon. Why do we do that?
Anyway back to the week… these are the lovely flowers I received from our neighbour when she came to introduce herself on Monday.

On the weekend I had a little practice run at making some Christmas-scented candles. Let’s just say it wasn’t overly successful. When star anise catches fire it’s not the most pleasant smell. Back to the drawing board on that one.

The damn rat is back. It’s worse than this pic now. More on the rat story in tomorrow’s garden update.

With the warmer weather we’ve been going for lighter dinners and would you believe haven’t had our Sunday pizzas for weeks. Last Sunday we had homemade rice-paper rolls. Apparently Will’s rolls were much better than mine – tighter and not as flimsy. I told him he could make them all the time and I was happy for him to be better than me!
They were a simple mix of sliced carrot, zucchini, capsicum and shredded cabbage with chicken and mine had mint – delicious!

The next night I made up Thai chicken noodles with the left over veges. I had totally forgotten about this dish but it’s one of our favourites and so easy to make especially for entertaining. I’ve made it to feed 100 before. What’s great about it is that it can be served warm, at room temperature or cold and works perfectly in noodle boxes.

I couldn’t resist sharing a pic of my adorable olive bowl. Will and I got it in Spain years ago and the novelty has never worn off.

Keeping to the healthy and light theme and inspired by Maureen’s Apple Meringue Surprise, I stewed some raspberries and chopped up apples together with a little vanilla and sugar and served them with a spoonful of cream. Yum!

Poor Kevin the sourdough starter has been a little neglected lately so I made a double batch of dough this week. Dad commented earlier in the week that he liked crunchy sourdough toast so I made him a little loaf to try. The other batch was a regular multigrain sandwich loaf that I always try to keep in the freezer.

If you follow me on Facebook or Instagram you would have seen my somewhat fear-filled tart-baking experience for Will’s Birthday. The tart did not start off well but wasn’t a total disaster. I’ll tell you all about it next week.

I had morning tea with my mum, grandma and sister during the week and loved seeing the cafe get into the Halloween spirit. I’ll share a bit more detail about this place later. It’s a must-visit.

The most important thing this week was definitely Will’s Birthday! He went all out with the celebrations and I’m pretty sure had a great time. He was rather spoilt the lucky thing but that’s what Birthdays are for right?
What about you? How was your week?
